The place

A press house carved into the rock

Le Pressoir is the château’s former wine-press cellar, cut into the rock in the 17th century. The old lever press still stands in the room.

In the evening only twenty to thirty guests are seated beneath the vault, among pale stone, old timber and candles. Candes-Saint-Martin, listed among the Most Beautiful Villages of France, stands where the Loire meets the Vienne.

The table

Chef Guillaume Susin’s contemporary take on French cuisine bourgeoise

In the kitchen, chef Guillaume Susin offers cooking inspired by the French tradition of cuisine bourgeoise and resolutely contemporary. Trained by Meilleurs Ouvriers de France, holders of the country’s highest craft distinction, and with solid experience in fine dining, he puts tradition and wine centre stage to bring out carefully chosen seasonal produce from the Loire Valley.

The Château Menu comes in three or four courses and changes with the seasons. It is served in the hushed atmosphere of the troglodyte rooms of Le Pressoir.

In the dining room, maître d’hôtel Cécile Hénault welcomes you in French and in English. With natural ease, she presents a varied list of Loire wines: Chinon, Saumur, Saumur-Champigny, many of them from organic estates.

Original place for a dinner. A little chilly (cave) but blankets are provided. I did not need them and was wearing a polo. The meals were outstanding and very good advice for the vine.
